Grilled Vegetable Kabobs

4 tablespoons Leigh Oliver’s Bistro Herb Blend Seasoning and Rub
½ cup olive oil
¼ cup red wine vinegar
1 package cherry tomatoes
3 yellow squash, cut into 1-inch chinks
12 button mushrooms, cleaned
3 zucchini. cut into 1-inch chunks
1 red onion, cut into chunks

Combine Leigh Oliver’s Bistro Herb Blend Seasoning with olive oil. Use back of spoon to crush seasoning into olive oil. Add vegetables and stir to combine. Cover and let sit at room temperature for at least two hours. When ready to grill, thread 4 skewers with vegetables. Grill over medium heat for about 12-14 minutes, until they are slightly charred and soft. Turn them once.
