Cilantro-Lime Rice

1 teaspoon olive oil
2 teaspoons fresh cilantro leaves
2/3 cup white basmati rice
2 cups chicken or vegetable broth
1 tablespoon fresh lime juice

In large saucepan, heat olive oil. Stir in rice and lime juice. Pour in broth. Bring to a boil. Cover and turn heat down to low. Simmer until liquid is absorbed, about 25 minutes. Right before serving, add cilantro and fluff rice with a fork. Serve.
